Ingredients
• 3 packham pears, cored, cut into 2cm pieces
• 2 cinnamon sticks
• 1 star anise
• 2 teaspoons caster sugar
• Star anise, to serve (optional)

Method
Step 1
Place pear, cinnamon sticks, star anise and 4 1/2 cups cold water in a saucepan over medium heat. Bring to the boil. Reduce heat to low. Simmer, partially covered, for 10 to 12 minutes. Cover. Set aside for 10 minutes to let flavours develop.

Step 2
Strain mixture into a heatproof jug. Add sugar. Stir until dissolved. Pour into warmed glasses. Serve with star anise (optional)
